At West, Chef and his brigade cook contemporary dishes with a nod to tradition. Everything is prepared in season and to order to best showcase our local produce.

Beautifully lit, flattering and gleaming, with a champagne bar, cosy booths and smooth dark wood, West is a modern take on a classic - a contemporary riff on a San Fran-style club restaurant.

With executive chef Martin O'Donnell at the helm, West Restaurant showcases the finest local produce, sourcing the best wild and cultivated ingredients at the optimum moment of seasonal perfection. Everything is prepared 'a la minute', including the breads and pastries freshly made in The Twelve Bakery Shop. 

Our sommelier’s wine list is justifiably famous – winning The Best Wine List in Ireland and World Wine Spectator awards of excellence over and over again, and Wine Maker's Dinners are a regular feature. 
Our wine collection is on display throughout the restaurant and the Champagne Bar serves up to twenty different wines and bubbles by the glass.
