Your special tutorial evening will beginwith a comprehensive 45 minute wine tasting with top sommelier and generalmanager Fergus O’Halloran. Passionate about both food and wine, Fergus graduatedas Canada’s top Sommelier in 1997 from The International Sommelier Guild ofCanada, and is famous for his wine pairings, suiting a particular mood or justto complement food. Fergus will familiarise guests with the West restaurant’simpressive wine list which is uniquely designed under wine style headings, withdetailed tasting notes and amusing quotations. Fergus will then educate guestson the perfect accompaniments to suit the sumptuous five course tasting menuwhich includes a wonderful Donna Rosa Albariñowine with fresh seared Brill, all prepared by Barna born Head ChefMartin O’ Donnell. Expect simple, fresh food cooked to perfection!
